#5 Papaya Salad & Gewürztraminer

Thai green Papaya Salad, better know as Som Tam, is one of the most popularly dishes in Thailand. Now you find Papaya Salad almost every street corner in Bangkok.

This salad is often made of shredded papaya, sliced tomatoes, raw yardlong beans, peanuts, dried mini shrimp, and fresh garlic. A sweet and salty sauce made of sugar, lime juice, and fish sauce completes the dish. 
This dish can be served quite spicy. The cook typically have a bowl of hot chilies to add and you can request how level of chilies you want. 
To make a beautiful pairing with this salad, you have to look for a dry or semi-dry white wine made from aromatic grape variety, here I suggest a New-Zealand's Gewürztraminer from Wairau River in Marlborough.
The aromatic finesse of rose flower and lychee blends perfectly with the surprising aromas of white truffle, The whole will sublimate the exoticism of the salad while keeping a fresh and tasty finish.

Few words about the wine ; 

Marlborough is New Zealand's most important wine region, producing more than half of the country's wines. Since the arrival of Sauvignon Blanc in the 70s and 80s, the region has been considered the landmark of Sauvignon Blanc.

For comparison, Martinborough is distinguished by its production of exceptional Pinot Noir, and Hawkes Bay by its Cabernet Sauvignon.
