- Can you tell us about you ?
Hi Everyone,
I’m Julien, Head sommelier for a new restaurant in Geneva, signed by one of the best chef in the world. Before this position I worked as a sommelier for different restaurants in Paris, Evian, Saint Tropez and UK.
I worked 10 years for the Chef « Joel Robuchon ». Since the first day, I fell in love with his culinary philosophy and for a wine lover like me, it was the perfect work conditions to develop my own knowledges.
- What inspired you to become a Sommelier ?
It’s a good question. To be honest with you, I’m in love with wine since my teenage period. My first experience was the harvest, vintage 2000, it was in the beaujolais’s vineyard, was a great memories !
Few years later, I met my « wine father » at the Evian Royal Resort, he gave me his passion and he tought me a lot, I'm so grateful, because he did his best for me and at the final he was right... At school, I never worked like that and I wanted to become a Sommelier like him with his same human values, generous, pasionnate and his love of this job. I'll try to keep it in my mind until the rest of my life of sommelier.
- I know you love the wines from Beaujolais, what are the strengths of this area ?
That’s true. I love the wines from Beaujolais. Recently, I became « Wine Ambassador » for a small estate created by a young lady on the appellation Régnié.
I liked the organic approach and of course the wines.
The strength of this region, it’s the diversity of different identities that you will find throughout all the vineyard.
Also, Iam a Big Fan of Gamay and Chardonnay.
- Chardonnay is very confidential production in Beaujolais, do you think the winemakers need to push it or stay focus on Gamay ?
For us, sommeliers, it’s very interesting to taste a chardonnay with a different style. Often we taste white Burgundy but I think this grape variety is really good here, also for real good value, you can taste fantastic wines ! So,Keep going like this...
- Which one is your favorite cuvée from Beaujolais ? Can you describe it for us ?
My Favorite cuvée is very hard to find now !!
This is the cuvée « ULTIME » on Fleurie appellation and made by Yvon Metras. My last tasting was ULTIME 2009, just perfect.
The nose was like A Burgundy grand Cru, fascinating and voluptuous. The mouthfeel very sexy with a silky sensation. Aromas of dark fruit, hints of delicates spices. what a beauty !
- If you could only have one wine for the rest of your life, which one you will choose ?
I love wine too much to choose one!! But, just for your question, I would say a wine From DRC, probably LA TACHE, a vibrant wine, delectable and seductive.
- You are working since long time with Joel Robuchon Group, what can you suggest to pair with the famous Potato Purée ?
It’s true, Joel Robuchon and his famous mashed potatoes is a success story even if it's not only that. I will tell you my secret... My best recommandation to properly appreciate is a crispy French Baguette and a glass of white Burgundy like a nice Puligny / Chassagne Montrachet or a Corton Charlemagne, it’s important to drink something fresh and Generous.
Crispy Bread + mashed Potatoes + Corton Charlemagne 2016 H.Boillot = The result is just unbelievable !!! Simple things are often the Best.
