#1 Veal Kidney & Alsace Pinot Noir

Let's start this blog with a personal note, I would like to share with you one of my childood memorie dish made by my Father; 

Veal Kidney, Spaetzle, Pinot Noir sauce

In the past people have considered kidneys as a vulgar dish. Today it is a noble and gourmet dish.

The veal kidney have a tender texture and a finesse taste and served with an intense pinot noir sauce, you have to look for a wine with balance between elegance and firmness. 

Tips : One of the number ways of wine pairing recommend to use the same wine as the sauce.

I suggest one of the beautiful Alsace Pinot Noir expression from Domaine Albert Mann on the cuvée Grand H, expressive, animal touch with well balanced structure.


Few words about the wine ;

H means Grand Cru Hengst, hill from the village of Wintzenheim. Since 15 years the Pinot Noir from Alsace have gone from thirsty wine, easy to drink to great gastronomic wines. In cause of global warming but especially to the winemakers who like the Domaine Albert Mann highlight the superb Alsatian terroirs and particularly the Grand Crus.

If you are passing through Alsace do not hesitate to go there, you will be well received by Marie-Thérèse and the whole family, from Riesling Cuvée Albert to the Crémant and Grand Crus there is something for every taste and all budgets.
